Chess Squares, Oh my!

I found this recipe on Pinterest. First of all I love that it is easy and starts with a boxed cake mix and second of all it has cream cheese in it! Seriously anything with cream cheese grabs my attention. I made these delicious bars and they did not disappoint. Give them a whirl, they are rich, gooey and satisfying. (They could also be a good dessert to make with kids since they aren’t too tricky.)

Chess Squares

Recipe and photos from Kevin & Amanda

1 box yellow cake mix
3 eggs
8 oz cream cheese, softened
1/2 cup (1 stick) butter, melted
4 cups (1 lb) powdered sugar

Preheat oven to 300 and spray a 9×13 dish with cooking spray. Mix cake mix, melted butter and one egg to a soft dough. Press into the bottom of the pan. Mix powdered sugar, softened cream cheese and remaining two eggs until smooth, about 1-2 mins. Pour on top of crust. Bake at 300 for 40-50 minutes until top is golden brown.

  1. They are delicious! I always make them ahead and then put them in the fridge because they are gooey. Once they get cold I slice them and put them on a tray. Then serve them whenever you want. They are just as good the day after as the day they’re made! Enjoy!!
